Shetland
cuisine is based on natural, home-grown or fresh, locally caught produce most of
which is of organic. Shetland lamb is sought after worldwide and Shetland beef
is becoming very popular along with an increasing range of dairy products.
The islands are justifiably proud of their rich variety of fish and shellfish
products many of which are processed and packaged locally.
Shetland
Norse enjoys a unique position in the Shetland fish processing sector. At the
company's modern, EU approved premises in Mid Yell around 400 tonnes of crab and
200 tonnes of scallops are processed per year for markets throughout Europe. The
company has recently embarked on an expansion project diversifying into the
canning of herring, mackerel and salmon fillets in a variety of can sizes and
sauces.
Shetland Farm Dairies Ltd. was formed in 1994. The six dairy
farms in Shetland today each have a share allocation equating to their
individual quota holding, and a seat on the Board of Directors. Daily collection
from the farms ensures that milk is always fresh.
As
part of the 'Seafood from Shetland' banner, Shetland Salmon Farmers' Association
represents the interests of the salmon farming companies in Shetland, and
through its marketing efforts, aims to increase awareness of Shetland salmon and
Shetland seafood products.
The Valhalla Brewery, Britain's
most northerly brewery, was opened in December 1997 by husband and wife team,
Sonny and Sylvia Priest and produces an award-winning range of real ales.
